This is my first attempt at homemade bread, and I’ve got to say it was really easy! The kneading took a little muscle (which I am sorely lacking) but I even enjoyed that physical aspect of the process. The recipe makes 4 loaves, so plenty for now and plenty to freeze for later!
4 cups warm [...]

Rice Pudding

I haven’t posted many recipes lately. In part because we have been on vacation, but mostly because I have been in a cooking funk. Well, maybe a general funk. Summer is over, but it is still bloody hot. I’m ready for fall, for hearty soups and stick to your ribs kinds of meals . . [...]

My mother sent me this recipe a few weeks ago, and it seems I forgot to post it. After having now been properly chastised by my mother, here is the recipe. Enjoy!
4 or so yellow squash
1 small sweet onion chopped
1cup shredded carrots
6 oz. fat free sour cream
a little skim milk
1- 8oz. can water chestnuts chopped
1 [...]
Chard Stuffed With Risotto and Mozzarella

This week’s coop box included rainbow chard. NOT something I have ever cooked before. Another coop member sent this recipe from the August 6th New York Times and I think we will try it for dinner tonight. I don’t have any saffron (and my budget is too tight to go and buy it just for [...]
Cinnamon Raisin Scones

I’ve been wanting to try baking scones for a while now, as they seem like a nice alternative to the muffin rotation – still easy to make and easy to freeze but a little less sweet. Since the big family beach trip is now exactly one week away (yeah!) I decided to spend the afternoon [...]

In honor of the opening ceremonies for the 2008 Olympic Games, I thought we would have an asian-inspired dinner tonight. Fair warning: these guys pack quite the spicy punch! If your family doesn’t like heat, I would cut out the cayenne.
1/2 cup TVP
1/4 cup water
1/2 teaspoon grated fresh ginger
1 clove garlic, minced
2 teaspoon soy sauce
2 [...]
Orzo with Roasted Veggies

This is a summertime favorite that is great warm but just as good (maybe even better?) cold from the fridge the next day. I’m not a big fan of eggplant, so I use extra bell peppers instead. And while I love feta, I’m not crazy about it in this recipe so I leave it out. [...]
Broiled Polenta with Mushroom Ragout

OK. Confession time again. I had planned to post about how easy (and cheap!) it is to make your own polenta at home. And how it tastes INFINITELY better than the store-bought polenta, which I always find somewhat gummy. And those things are definitely true. But I would be remiss if I didn’t confess that [...]
Spanish Style Beef & Rice

This is another Rachel Ray recipe – actually the first one of her recipes I ever tried! It is a favorite both because it tastes great, and because it freezes really well. The recipe below makes a double batch so you can stick half in the freezer for another day. Today I made this with [...]
